The December Baking Schedule: What to Bake When (and What Freezes)
December baking fails as a sprint and succeeds as a relay. The insight that changes everything: almost nothing needs to be baked in the final week — it needs to be finished then. Here is the calendar.
Week 1 (Dec 1–7): the freezer offensive
Mix every cookie dough and freeze in scoops (the pre-scoop system) — drop cookies, stuffed cookies, cutout dough in flat disks. Bake and freeze the sturdy finished goods: bars, fudge brownies, unfrosted quick breads. Labeled, dated, invisible until needed.
Week 2 (Dec 8–14): the keepers
Make what improves with age: real fudge (crystals behaving), candied nuts, anything in the biscotti family. Bake cutout sugar cookies naked and airtight them — decorating is next week's job, and undecorated cookies keep beautifully.
Week 3 (Dec 15–21): assembly week
Decorate (icing sets overnight — the two-consistency method), bake the fresh-only items from frozen scoops in 15-minute bursts, build the boxes, ship early in the week. The freezer empties as the boxes fill, which is deeply satisfying project management.
Dec 24–25: the victory lap
One tray of frozen scoops for warm-from-the-oven credibility, and a pan of cinnamon rolls shaped Christmas Eve, risen overnight in the fridge, baked while the wrapping paper flies — the full morning plan is in Christmas morning breakfast. Everyone thinks you baked for days. Technically, you did — three weeks ago.
