Ingredients

  • 2 cup (240g) all purpose flour
  • 1 tbsp corn starch
  • 1/3 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp vanilla bean paste or vanilla extract
  • 1/4 cup (50g) light brown sugar
  • 3/4 cup (150g) granulated sugar
  • 1 egg + 1 egg yolk , room temp
  • 1/4 cup sprinkles
  • 3/4 cup (170g) unsalted butter, melted
  • 4 tbsp granulated sugar , for rolling

Instructions

  1. In a bowl add butter, granulated sugar and brown sugar. Mix well to combine for 1-2 min. Crack in the egg and add the egg yolk. Whisk for 2-3 min until smooth paste forms. Add in the vanilla bean paste and mix to combine.
  2. In a separate bowl add all purpose flour, cornstarch, baking soda, salt. Mix to combine .
  3. Gradually add the dry ingredients to the wet batter and mix until just combined. Then, add the sprinkles and mix until they’re evenly distributed. Be careful not to overmix the batter.
  4. Scoop 12 cookies onto a piece of parchment paper and roll them in granulated sugar.
  5. Freeze them for 30 minutes.
  6. Preheat the oven to 350°F.
  7. Place 4 cookies onto one baking sheet, spacing them evenly.
  8. Let them cool completely before serving and enjoy.
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
