Loaded salchipapa (Latin street fries)

Crispy air-fryer potatoes buried under sausage, golden chicken, melty mozzarella, corn and sauces — Latin street food, homemade and huge.

Ingredients

  • 4 large potatoes
  • Sausages, to taste
  • 1 chicken breast, cut into pieces
  • Mozzarella cheese
  • Ketchup
  • Mayonnaise or Greek yogurt
  • Corn kernels
  • Olive oil (for the air-fryer potatoes)
  • Oil for frying the sausages (or use the air fryer)
  • Salt and your favorite seasonings

Instructions

  1. Cut the potatoes into fries and soak them in a bowl of ice water for 30 minutes. Dry well.
  2. Toss with olive oil and cook in the air fryer at 200°C (400°F) for about 20 minutes, shaking halfway, until golden and crisp.
  3. Fry the sausages to your liking (the air fryer works too), and slice them.
  4. Season the chicken pieces well and sear in a little oil until golden and cooked through.
  5. Build it: a base of sauce, then fries, cheese, more fries, chicken, sausages, corn, more cheese and a final zigzag of sauces. Dig in while it's hot.
Tip: The ice-water soak pulls out starch — it's the difference between limp fries and shattering-crisp ones.
