Loaded salchipapa (Latin street fries)

Ingredients
- 4 large potatoes
- Sausages, to taste
- 1 chicken breast, cut into pieces
- Mozzarella cheese
- Ketchup
- Mayonnaise or Greek yogurt
- Corn kernels
- Olive oil (for the air-fryer potatoes)
- Oil for frying the sausages (or use the air fryer)
- Salt and your favorite seasonings
Instructions
- Cut the potatoes into fries and soak them in a bowl of ice water for 30 minutes. Dry well.
- Toss with olive oil and cook in the air fryer at 200°C (400°F) for about 20 minutes, shaking halfway, until golden and crisp.
- Fry the sausages to your liking (the air fryer works too), and slice them.
- Season the chicken pieces well and sear in a little oil until golden and cooked through.
- Build it: a base of sauce, then fries, cheese, more fries, chicken, sausages, corn, more cheese and a final zigzag of sauces. Dig in while it's hot.
Tip: The ice-water soak pulls out starch — it's the difference between limp fries and shattering-crisp ones.
