Garlic parmesan chicken wings

Ingredients
- 2 lb chicken wings, skin-on ( separated into drumettes and wingettes )
- Salt to taste
- 1 tbsp baking powder
- 1 tbsp smoked paprika powder
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper powder
- 3 tbsp oil ( for marinade )
- Oil for deep frying
- For the wet batter — 1 cup all purpose flour
- For the wet batter — 1/2 cup cornstarch
- For the wet batter — 1/2 cup rice flour, optional (substitute with 1/2 cup all-purpose flour if not using)
- For the wet batter — Salt to taste

- For the wet batter — 1 1/4 cups of sparkling water or cold water ( to make thick pancake like batter )
- For the Garlic Parmesan sauce — 1/3 cup butter
- For the Garlic Parmesan sauce — 4 cloves fresh garlic minced
- For the Garlic Parmesan sauce — 1 tsp red chili flakes
- For the Garlic Parmesan sauce — 1/3 cup kewpie mayonnaise
- For the Garlic Parmesan sauce — Salt to taste
- For the Garlic Parmesan sauce — 1 tsp smoked paprika powder
- For the Garlic Parmesan sauce — 1/2 tsp black pepper powder
- For the Garlic Parmesan sauce — 1 tbsp parsley, finely chopped
Instructions
- Pat dry the wings and add them to a mixing bowl. Add oil and baking powder. Season with salt, pepper, paprika powder, garlic powder, onion powder, black pepper powder. Mix well to combine and let it marinate for 2 - 3 hours or overnight.
- Make the wet batter: In another bowl add all-purpose flour, cornstarch, rice flour salt, pepper, paprika, powder, garlic powder, onion powder, mixed well to combine, add in the sparkling water, and whisk until smooth thick batter farms.
- Preheat the oil to 365°F. Coat the marinated chicken in the wet batter. Carefully drop 4-5 wings in hot oil. ( do not overcrowd the pan) And turn the heat to medium, fry the chicken wings for 6-8 minutes or until the internal temperature reaches 165°F.
- Make the Garlic Parmesan sauce: In a pan add butter on medium heat once the butter is melted add chopped garlic and sauté for 1- 2 min or until fragrant .
- In a bowl add mayonnaise, salt, pepper, smoked paprika powder, red chili flakes Parsley. Add the garlic butter mixture and Parmesan cheese. Mix well to combine.
- Toss the fried chicken wings in garlic Parmesan sauce before serving. Garnish with more Parmesan cheese if desired and enjoy.
Tip: Let the meat rest a few minutes before slicing; it keeps the juices where they belong.
