The fast method

  1. Cut smaller before marinating: cubes in 20 minutes absorb what a whole breast takes 4 hours to.
  2. Use a zip bag with the air pressed out — full contact, half the marinade.
  3. Score thick cuts in a shallow crosshatch; acidic marinades penetrate the cuts fast.
  4. Room-temperature 20-minute marinades outperform fridge-cold hour ones (then cook immediately).

Why it works

Marinades only penetrate a few millimeters — surface area is everything, time barely matters past the first hour.

Salt and acid do 90% of the visible work in the first 30 minutes; overnight mostly benefits salt penetration alone.
