Ingredients
- 150g brown sugar (3/4 cup, packed)
- 300g mashed ripe bananas (about 3 large)
- 120g vegetable oil (1/2 cup)
- 1 tsp vanilla extract
- 180g all-purpose flour (1.5 cup)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 120g-150g diced strawberries (3/4 cup-1 cup)
- 6 pcs diced strawberries
- 2 tsp strawberry jam
- 1 tbsp milk
Instructions
- Preheat oven to 180°C / 350°F. Line a 9x5 loaf pan with parchment.
- In a bowl, mash your bananas then mix in the sugars. Whisk in the eggs then add the rest of the wet ingredienst ; oil and milk. Whisk well.
- Then add the flour, baking soda, baking powder, and salt. Gently fold just until no dry pockets remain.
- Fold in the strawberries.
- Pour into pan, smooth the top and bake for 60-65 minutes, until a skewer comes out clean. If the top starts to brown / burn quickly, place an aluminum foil on top of the bread around 35 mins in the oven.
- To make the glaze, lightly mash the strawberries and mix in the jam, icing sugar, and milk.
- Once baked, cool 15 minutes in pan, then lift out and cool fully before slicing.
Tip: Underbaking slightly is the secret — the centre firms up as it cools.
