Ingredients

  • 2 eggs
  • Fresh blueberries
  • 150 g chocolate chips
  • 115 g unsalted butter, melted
  • 200 g granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 100 g Greek yogurt
  • 2 tbsp neutral oil
  • 1 tbsp vanilla extract
  • 315 g all-purpose flour
  • 250 ml milk + 1 tbsp vinegar, rested 10 minutes (homemade buttermilk)
  • Kit Kat or chocolate chunks, to decorate
  • Optional filling: whipped cream with sugar, or cream cheese with powdered sugar

Instructions

  1. Mix the melted butter with the sugar, then beat in the eggs until lump-free.
  2. Add the oil, yogurt and vanilla, then pour in the homemade buttermilk.
  3. In a separate bowl, combine the flour, baking powder, baking soda and salt, and fold in the blueberries.
  4. Pour the dry mix into the wet ingredients and stir until just combined — do not overmix.
  5. Divide evenly between muffin cups and top with chocolate chunks.
  6. Bake 5 minutes at 220°C (425°F), then lower to 190°C (375°F) for 15–20 minutes, until a toothpick comes out clean.
Tip: That first blast of high heat is what makes the domes rise tall before the crumb sets.
