Homemade shakshuka

Eggs poached in a smoky fresh-tomato and pepper sauce with melted cheese and chili flakes — one pan, warm bread mandatory.

Ingredients

  • 5 large fresh tomatoes, chopped
  • Olive oil
  • 2 tbsp water
  • 1/2 onion, chopped
  • 1 red bell pepper, diced
  • 3 tbsp tomato paste (optional)
  • Salt, pepper, garlic powder, paprika
  • Chili flakes
  • Mozzarella or Parmesan
  • 4 eggs
  • Fresh parsley
  • Crusty bread, to serve

Instructions

  1. Soften the onion and bell pepper in olive oil over medium heat.
  2. Add the tomatoes with the water and tomato paste, and simmer 10 minutes, crushing them into a thick sauce.
  3. Season with salt, pepper, garlic powder, paprika and chili flakes, and stir in a handful of cheese.
  4. Make four wells and crack an egg into each.
  5. Cover and cook 5–7 minutes, until the whites are set and the yolks still jammy.
  6. Finish with parsley and more cheese, and serve from the pan with bread for dipping.
