Homemade shakshuka
Eggs poached in a smoky fresh-tomato and pepper sauce with melted cheese and chili flakes — one pan, warm bread mandatory.

Ingredients
- 5 large fresh tomatoes, chopped
- Olive oil
- 2 tbsp water
- 1/2 onion, chopped
- 1 red bell pepper, diced
- 3 tbsp tomato paste (optional)
- Salt, pepper, garlic powder, paprika
- Chili flakes
- Mozzarella or Parmesan
- 4 eggs
- Fresh parsley
- Crusty bread, to serve
Instructions
- Soften the onion and bell pepper in olive oil over medium heat.
- Add the tomatoes with the water and tomato paste, and simmer 10 minutes, crushing them into a thick sauce.
- Season with salt, pepper, garlic powder, paprika and chili flakes, and stir in a handful of cheese.
- Make four wells and crack an egg into each.
- Cover and cook 5–7 minutes, until the whites are set and the yolks still jammy.
- Finish with parsley and more cheese, and serve from the pan with bread for dipping.
