Ingredients

  • 100g brown sugar (1/2 cup)
  • 50g granulated sugar (1/4 cup)
  • 2 large eggs
  • 250g mashed bananas (about 2 large bananas)
  • 115g melted butter (1/2 cup)
  • 60g room temp milk (1/4 cup)
  • 180g all-purpose flour (1 1/2 cups)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 130g chocolate chips (1/2 cup)
  • 100g all-purpose flour (3/4 cup)
  • 80g brown sugar (about 6 tbsp)
  • 1/2 tsp cinnamon
  • 60g melted butter (1/4 cup)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease or line a 8x8 inch square pan
  2. In a large bowl, whisk together the mashed bananas, brown sugar, and eggs. Add the melted butter, milk, and mix until smooth
  3. Sift together the flour, baking soda, baking powder, and salt. Add to the wet mixture and stir gently until just combined
  4. Pour the batter into the prepared pan. Sprinkle the chocolate chips and swirl, then top with the streusel (and more chocolate chips if you like)
  5. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean. if the top browns too quickly, loosely cover with aluminum foil.
  6. Cool in the pan for 10–15 minutes before transferring to a wire rack. or just ear warm straight out of the pan
Tip: Room-temperature eggs blend in far more smoothly; five minutes in warm water does the trick.
