High-protein breakfast bagel sandwiches (meal prep)
Two-ingredient-dough yogurt bagels stuffed with baked eggs, mozzarella, bacon and avocado mayo — wrap, freeze, and win six mornings.

Ingredients
- For the bagels: 281 g all-purpose flour (2 1/4 cups)
- 368 g Greek yogurt (1 1/2 cups)
- 15 g salt (1 tbsp)
- 16 g baking powder (4 tsp)
- For the filling: 8 eggs
- 200 g yogurt or cottage cheese
- 2–3 scallions, chopped
- Salt and pepper
- 6 slices light mozzarella
- Crispy bacon
- Avocado mayo, to taste
Instructions
- Mix the flour, yogurt, salt and baking powder into a dough, shape 6 bagels and bake at 200°C (400°F) for 30 minutes.
- Whisk the eggs with the yogurt, scallions, salt and pepper, pour into a lined pan and bake at 180°C (350°F) for 15–20 minutes until set.
- Split the bagels, spread with avocado mayo, and fill with squares of baked egg, mozzarella and bacon.
- Bake 5 more minutes until the cheese melts.
- Cool completely, wrap in foil, and refrigerate or freeze. Reheat straight from the wrapper.
