Ingredients
- 2 large eggs
- 100g (1/2 cup) brown sugar
- 50g (1/4 cup) granulated sugar
- 350g mashed bananas (about 3 large bananas)
- 60g (1/4 cup) oil
- 60g (1/4 cup) Greek yogurt
- 60g (1/4 cup) whole milk
- 1 tsp vanilla
- 190g (1 1/2 cups) all-purpose flour
- 50g (1/2 cup) unsweetened cocoa powder
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- In a bowl mix the mashed bananas and the sugars. then add the rest of the wet ingredients: oil, yogurt, milk, vanilla.
- Then add the dry ingredients: flour, cocoa, baking powder, baking soda, salt, and chocolate chips.
- Fold gently then divide batter into 12 muffins.
- Bake at 220C (425F) for 5 mins, then while keeping the muffins in the oven, bring down temperature to 180C (350F) and bake for another 13-15 mins. (18-20 mins total)
- I used a lot of bananas in the video because they were small but still 350g in total.

Tip: Chilling the dough deepens the flavour and stops the spread — worth the wait.
