Chocolate chip banana bread

Ingredients

  • 3 ripe (330g) bananas, peeled and mashed
  • 8 tbsp (113g) unsalted butter, melted
  • 1 egg, room temp
  • 1/3 cup(67g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 tbsp vanilla bean paste
  • 1/3 cup (80g) sour cream or greek yogurt
  • 1 1/2 (190g) cup all purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1 cup (170g) semi sweet chocolate chips

Instructions

  1. Preheat the oven to 350 F. Line a 9*5 loaf pan with parchment paper.
  2. Make wet batter In a large mixing bowl, add mashed banana, melted butter, granulated sugar and brown sugar, mix for 1-2 min until well combined.
  3. Crack in the egg and whisk until well combined.
  4. Add in sour cream and vanilla bean paste, mix for 1-2 min until everything is well combined.
  5. Make dry batter: In a separate bowl combine all purpose flour, salt and baking soda.
  6. Gradually add dry ingredients to the wet batter, add in chocolate chips. Mix until just combined. Do not over mix the batter at this point.
  7. Pour the batter into the prepared loaf pan , top with more chocolate chips if desired. Bake the banana bread for 55 - 65 minutes or until the toothpick inserted comes out clean.
  8. Let cool completely before cutting and serve.
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
