Brown butter Chocolate chip banana bread

Ingredients
- 3 ripe (330g) bananas, peeled and mashed
- 8 tbsp (113g) unsalted butter, melted
- 1 egg, room temp
- 1/3 cup(67g) granulated sugar
- 1/2 cup (100g) light brown sugar
- 1 tbsp vanilla bean paste
- 1/3 cup (80g) sour cream or greek yogurt
- 1 1/2 (190g) cup all purpose flour
- 1 tsp baking soda
- Pinch of salt
- 1 cup (170g) semi sweet chocolate chips + more for sprinkling on top
Instructions
- Add butter to a light-colored saucepan over medium heat. Melt completely. It will foam and bubble stir constantly.
- Once butter turns deep golden amber and smells nutty, remove immediately from heat.
- Pour into a bowl (scrape all the brown bits in).
- Let cool 5–10 minutes before using.
- Preheat the oven to 350 F. Line a 9*5 loaf pan with parchment paper.
- In a large mixing bowl, add the mashed banana and browned butter.
- Add the brown sugar and granulated sugar mixture and mix for 1-2 min until well combined.
- Crack in the egg and whisk until combined.
- Add the sour cream and vanilla bean paste and mix for 1-2 minutes until everything is well combined.
- Make dry batter: In a separate bowl combine all purpose flour, salt and baking soda.
- Gradually add dry ingredients to the wet batter, add in chocolate chips. Mix until just combined. Do not over mix the batter at this point.
- Pour the batter into the prepared loaf pan , top with more chocolate chips if desired. Bake the banana bread for 55 - 60 min or until the toothpick inserted comes out clean.
- Let cool completely before cutting and serve.
Tip: Prep every component first; once the heat is on, this moves quickly.
