Ingredients

  • 2 large eggs
  • 2 tbsp oil
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 pcs apples (diced)
  • 30g (2 tbsp) brown sugar
  • 1 tsp cinnamon
  • 1 tbsp milk

Instructions

  1. Preheat the oven to 425F (220C).
  2. In a bowl whisk the melted butter and the sugars together.
  3. Then add in eggs and the rest of the wet ingredients : oil, yogurt, milk, and vanilla extract. Whisk until well combined.
  4. Add the dry ingredients (flour, baking powder, baking soda, cinnamon, salt) to the wet ingredients. Mixing gently until just combined (don't overmix).
  5. Fold in the chopped apples
  6. Divide the mixture into 12 muffins then top with the crumble topping.
  7. Bake at 425F (220C) for the first 5 mins. Then without opening the oven door, bring down temperature to 350F(180C) and bake for 13-17 mins more (18-22) mins in total.
  8. After baking, drizzle with icing and enjoy

Tip: Underbaking slightly is the secret — the centre firms up as it cools.
