Why Do My Cookies Spread Flat? The 6 Culprits

The six, in order of likelihood

1. Butter too warm. The number-one cause by miles. Butter should dent under a finger, not squish — softened past that, the dough is pre-melted and spreads on contact. The fast-but-safe softening methods are in this guide.

2. No chill. Thirty minutes in the fridge solidifies the fat so it melts slowly in the oven — slow melt equals tall cookie. Stuffed formats like Kinder cookies are unforgiving without it.

3. Hot pans. Dough on a sheet still warm from the last batch starts melting before the oven door closes. Rotate two cool pans, or run the hot one under cold water.

4. Not enough flour. Scooping packs up to 25% extra flour — but the reverse error, skimping, removes the structure that holds shape. Spoon flour into the cup and level it.

5. Dead leavening. Baking soda older than six months lifts nothing. Test: a spoonful in vinegar should erupt.

6. Too much sugar. Sugar liquefies in the oven; over-sweet dough literally melts. Follow the ratio — or lean into it and make blondies, where spread is the job description.
