Don't Toss the Guts: Roasting Pumpkin Seeds Right

Every carved jack-o'-lantern produces a free cup of snacks that most households throw in the trash. The seeds take fifteen minutes of actual work, and done right they out-crunch anything in the chip aisle.

The method (with the step everyone skips)

1. Separate ruthlessly. Dump the guts in a bowl of water — seeds float, pulp sinks, and the world's most tedious job becomes a thirty-second swish. 2. Boil ten minutes in salted water. This is the skipped step and the whole secret: it seasons the seed inside the hull and pre-cooks the interior so the oven's only job is crisping. 3. Dry hard. Towel-blot, then spread out — water is the enemy of crunch. 4. Roast at 350°F, 12–15 minutes, tossed in a tablespoon of oil, stirring once, until golden and rattling on the pan.

Four directions beyond salt

Garlic parmesan (toss with grated parm the second they exit — the potato ball flavor family, in snack form). Cinnamon sugar, honorary dessert alongside the pumpkin cinnamon rolls. Smoky heat: paprika, cumin, cayenne. Everything bagel, which is legally allowed on all foods now.
