Pumpkin Season Starts Now: Purée, Spice Mix and What to Bake First

Pumpkin season no longer waits for fall — search interest starts climbing in late August and does not peak until Halloween week. If you bake it, September is when to start; if you rank for it, even earlier.

Canned vs homemade purée: settled

Use canned. That is not laziness — canned pumpkin (often Dickinson squash) is denser, drier and more consistent than anything you will roast at home, and pie-quality bakes depend on that low water content. Homemade purée from a sugar pumpkin is a lovely weekend project, but drain it in a towel-lined sieve for an hour or your pumpkin cinnamon rolls will pay for the moisture. One non-negotiable: pumpkin purée, not pumpkin pie filling — the second is pre-sweetened and ruins recipe math.

The 30-second spice mix

Stop buying the tiny jar. Per tablespoon: 2 tsp cinnamon, ½ tsp ginger, ½ tsp nutmeg, ¼ tsp allspice, ¼ tsp cloves. Scale it up, jar it, and it seasons everything from oatmeal to whipped cream through November.

What to bake first

Start where pumpkin meets crowd-pleasers: pumpkin cinnamon rolls for the weekend statement bake, a pumpkin tres leches when you want the dinner-party version, and cinnamon swirl muffins as the weekday gateway. Leftover purée keeps a week in the fridge or three months frozen in ice-cube trays — two cubes is one smoothie, and nothing gets wasted.
