How to Rescue overcooked chicken (Rescue in Minutes)

Dinner is on the line and something went sideways. Deep breath — this is fixable, usually in under five minutes.

The rescue, in order

  1. Slice or shred it thin — thin pieces read tender.
  2. Sauce is salvation: 10 minutes simmering in any sauce, gravy or broth rehydrates the surface.
  3. Redirect: chop into a mayo-dressed salad, soup, or saucy pasta where moisture comes from elsewhere.

Why this works

Overcooking squeezes water out of muscle fibers permanently — you cannot re-plump them, but you can coat and surround them.

So it never happens again

A thermometer ends this forever: pull chicken at 162°F, rest 5 minutes to carryover 165°F.
