One-pot lasagna soup
All the bolognese-and-cheese comfort of lasagna, deconstructed into a cozy one-pot soup that's ready in under an hour.

Ingredients
- Olive oil
- 1 large garlic clove, minced
- 1 onion, diced
- 1/2 carrot, diced
- 500 g ground beef
- 2 tbsp tomato concentrate
- 1/2 cup water or vegetable broth (plus 1 more cup if needed)
- 500 g tomato puree or passata
- 6 lasagna sheets, broken into pieces
- Salt, pepper, garlic powder, paprika
- Bechamel (optional)
- Chopped parsley
- 50 g pecorino cheese
- 100 g Parmesan cheese
- 200 g mozzarella cheese
Instructions
- Warm the oil in a large pot and cook the onion, carrot and garlic until soft.
- Add the ground beef and cook until well browned, seasoning with salt, pepper, garlic powder and paprika.
- Stir in the tomato concentrate, then the passata and the broth.
- Add the broken lasagna sheets, cover, and simmer about 30 minutes, adding more water or broth as the pasta drinks it up.
- Stir in the pecorino and Parmesan, top with mozzarella, cover 1 more minute until it melts.
- Ladle into bowls with parsley and a swirl of bechamel if you're feeling fancy.
