The fast method

  1. Start eggs in already-boiling water, not cold — the shock sets the white away from the membrane.
  2. Ice bath immediately after cooking, 5 full minutes.
  3. Crack all over, roll gently, peel under a trickle of water starting at the fat end (the air pocket).

Why it works

The membrane, not the shell, causes ugly peeling; thermal shock on both ends breaks its grip.
