Make-Ahead Party Appetizers for the Holiday Rush
Holiday hosting has a cruel structure: the food is needed exactly when you are busiest. The fix is an appetizer lineup where everything is done before the doorbell — day-ahead or freezer-ahead, finished in 15-minute oven bursts.
The freezer battalion
Breaded and stuffed things are born for this: croquettes, cheesy potato balls and pizza pockets all freeze raw-breaded for weeks and bake from frozen at 400°F in 12–15 minutes — hotter, crispier and fresher than anything made that morning. Stagger trays every 20 minutes and the food arrives in waves instead of one overwhelming buffet dump.
The day-ahead division
A bacon dip assembled Tuesday and baked Wednesday actually improves overnight as the flavors settle. Boards (cheese, charcuterie) build 24 hours out under wrap; anything marinated wants the extra day. The rule from the holiday make-ahead doctrine applies here too: fully cooked or fully raw overnight — never half.
The party math
Cocktail-hour-into-dinner: 4–6 bites per person. Appetizers-as-dinner: 10–12, weighted toward the substantial. One hot thing in the oven, one warm thing in a slow cooker, two cold things already out — that four-slot rotation feeds thirty people from one oven, and the host attends their own party. New Year's Eve runs the same playbook with more sparkle: the NYE edition.
