How to Thaw a Turkey Safely: The Day-by-Day Calendar
The most heartbreaking Thanksgiving mistake happens four days before dinner: nobody moved the turkey to the fridge. Work backwards from your dinner date with this calendar and it cannot happen to you.
Fridge thawing: 24 hours per 4β5 pounds

Keep the bird in its wrapper, breast up, on a rimmed tray on the bottom shelf β thawing turkeys drip, and nothing below them should be edible. A fully thawed bird holds safely in the fridge another 1β2 days, so early is free insurance.
The cold-water rescue (30 min per pound)
Behind schedule? Submerge the wrapped turkey in cold tap water, breast down, and change the water every 30 minutes β that refresh keeps the surface out of the bacterial danger zone. A 16-pounder thaws in about 8 hours this way. It is a commitment, but it works; the same principle as fast-thawing chicken, scaled up.
What never works
The counter overnight (outside layers spend hours above 40Β°F while the core stays frozen), hot water, the garage, the trunk of the car in November. Cooking from frozen is technically safe but takes 50% longer and seasons terribly β an emergency exit, not a plan.
Once thawed and roasted β times in the cooking chart β the 3β4 day leftover clock starts, and the wrap-and-sandwich pipeline opens: think caesar wrap, but turkey.
