Chicken Caesar Smash Tacos
Thin layers of ground chicken pressed onto mini tortillas and seared, then piled with romaine, Parmesan, croutons and a garlicky Caesar dressing.
Ingredients
- 2 lbs minced chicken
- 10 mini tortillas
- Salt and pepper to taste
- Oil for cooking
- For the Caesar dressing — 1 cup mayonnaise
- For the Caesar dressing — 2 tsp Dijon mustard
- For the Caesar dressing — Salt, to taste
- For the Caesar dressing — 3 tbsp olive oil
- For the Caesar dressing — 1 tsp Worcestershire sauce
- For the Caesar dressing — 2 tsp lemon juice
- For the Caesar dressing — 2-3 cloves garlic, freshly minced
- For the Caesar dressing — 1 tsp black pepper
- For the Caesar salad — 1 large romaine lettuce, diced
- For the Caesar salad — 1/3 cup parmesan cheese, shredded or shaved
- For the Caesar salad — 1 cup croutons
Instructions
- Prepare the chicken: divide the minced chicken into 10 equal portions. Place 2-3 tablespoons of ground chicken in the center of each tortilla, pressing down gently to create an even layer. Sprinkle with salt and black pepper.
- Cook the tacos: heat a skillet over high heat with a small amount of oil. Place the tortillas, meat side down, in the skillet and cook over medium-low heat for 2-3 minutes or until cooked through. Flip the tacos and cook the other side until crispy and golden.
- Make the Caesar dressing: in a bowl, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, garlic, salt, and black pepper. Slowly pour in olive oil while whisking until the dressing is smooth and emulsified.
- Assemble the tacos: top each cooked taco with diced romaine lettuce, shaved parmesan cheese, and croutons. Drizzle the Caesar dressing over the top of each taco.
- Serve immediately.
