The two-hour rule
The countdown starts before the fridge does: cooked food left out more than 2 hours (1 hour above 90Β°F) enters the bacterial danger zone, and refrigerating it afterward does not reset the clock. Portion big batches into shallow containers so they chill fast β a deep pot of soup can stay warm in its center for hours.
Rice deserves its own warning
Uncooked rice can carry Bacillus cereus spores that survive cooking and multiply at room temperature. Cool rice within an hour, reheat it steaming hot, and never give it a second day out. A burrito bowl made from properly stored rice is meal prep; the same bowl left on the counter overnight is a gamble.
