How to Tame a too-spicy dish (Rescue in Minutes)

Dinner is on the line and something went sideways. Deep breath — this is fixable, usually in under five minutes.

The rescue, in order

  1. Dairy is the antidote: cream, yogurt, sour cream or coconut milk stirred in.
  2. Sweet + acid team up: a teaspoon of sugar with a squeeze of lime rounds the burn.
  3. Stretch it: double the un-spiced base ingredients and freeze the surplus.
  4. Serve-side rescue: rice, bread and a yogurt dollop let each eater self-medicate.

Why this works

Capsaicin is fat-soluble — dairy fats literally dissolve and carry it away; water just spreads it around.

So it never happens again

Chili heat compounds as dishes reduce — season heat at the end of cooking, not the start.
