Ingredients
- 13/4 cups all-purpose flour (210 g)
- 1 tsp baking powder (5 g)
- 1/2 tsp baking soda (2 g)
- 1/2 tsp salt (2 g)
- 2 tbsp cocoa powder (12 g)
- 1/2 cup granulated sugar (100 g)
- 1/2 cup brown sugar, packed (100 g)
- 1/2 cup neutral oil (120 ml)
- 2 large eggs, room temp (100 g)
- 1 tsp vanilla extract (5 ml)
- 1 tsp white vinegar (5 ml)
- 1 tbsp red food coloring (15 ml)
- 1/2 cup milk (120 ml) preheat oven to 325°F and line a loaf pan
- 8 oz cream cheese, softened (226 g) (for the frosting)
- 4 tbsp butter, softened (57 g) 1– (for the frosting)
- 11/2 cups powdered sugar (120– (for the frosting)
- 180 g) (for the frosting)
- 2 tbsp maple syrup, optional (40 g) (for the frosting)
- 2 tsp vanilla paste (10 g) (for the frosting)
Instructions
- Whisk together the dry ingredients until fully combined
- In another bowl, whisk the sugars and oil until glossy
- Add the eggs and whisk until smooth
- Mix in the vanilla, vinegar, red food coloring, and milk
- Gently add the dry ingredients to the wet and whisk just until smooth
- Do not overmix, the batter should be thick but pourable
- Pour into the prepared loaf pan and smooth the top
- Bake for 55–70 minutes, until a toothpick comes out with a few moist crumbs
- Cool in the pan for about 20 minutes, then remove and cool completely before frosting
- Cream cheese frosting
- Beat the cream cheese and butter together until completely smooth and creamy
- Add the powdered sugar and mix until fully incorporated and fluffy
- Mix in the maple syrup, (if you’re using the syrup i recommend less sugar) and vanilla paste until smooth
