Fudgy brookies (brownie + cookie bars)
One pan, two personalities: a rich fudgy brownie layer topped with pockets of chewy chocolate chip cookie dough.

Ingredients
- For the brownie layer: 185 g unsalted butter
- 40 g powdered milk (optional)
- 50 g cocoa powder
- 200 g 70% dark chocolate
- 3 tbsp oil (vegetable or olive)
- 3 eggs, room temperature
- 100 g brown sugar
- 190 g powdered (icing) sugar
- 66 g all-purpose flour
- 1 tbsp vanilla extract
- Pinch of salt
- 180 g milk or semisweet chocolate, chopped
- For the cookie dough: 60 g butter, melted
- 50 g brown sugar
- 30 g granulated sugar
- 25 g beaten egg (about half an egg)
- 110 g all-purpose flour
- 1/4 tsp baking soda
- 60 g chocolate chips
Instructions
- Melt the butter with the dark chocolate and oil, then whisk in the cocoa and powdered milk until glossy.
- In a bowl, whisk the eggs with both sugars and the vanilla until slightly thickened, then stream in the chocolate mixture.
- Fold in the flour and salt, then the chopped milk chocolate. Pour into a lined baking pan.
- For the cookie dough, stir the melted butter with both sugars, mix in the beaten egg, then the flour and baking soda, and finally the chocolate chips.
- Drop spoonfuls of cookie dough over the brownie batter, pressing them in lightly.
- Bake at 180°C (355°F) for about 40 minutes. Cool for at least 1 hour before slicing — they set as they cool.
Tip: The one-hour cooling rest isn't optional: cutting early turns clean fudgy squares into delicious chaos.
