Tiramisu Banana Bread

Ingredients
- 3 medium ripe bananas, mashed
- 1/2 cup salted butter, browned (113g)
- 1/2 cup brown sugar (100g)
- 1/4 cup granulated sugar (50g)
- 1 large egg, room temp
- 1/4 cup plain greek yogurt (60g)
- 1 tbsp vanilla paste (13g)
- 2 cups all-purpose flour (240g)
- 1 tsp baking powder (4g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 2 tsp cinnamon
- 1 tbsp instant espresso powder (i used nescafé gold blonde) instructions brown the butter and
- 2 tbsp brown sugar and
- 1 tsp vanilla paste until the sugar dissolves
- 8 oz mascarpone
- 1 cup cold heavy
- 1/3 cup powdered sugar( add to taste ) (for the cream)
- 1 tsp vanilla (for the cream)
- 1 tsp instant espresso whip everything together until thick and fluffy (for the cream)
Instructions
- Let it cool slightly
- In a large bowl, whisk together the mashed bananas & browned butter, then mix in brown sugar, granulated sugar, egg, greek yogurt, vanilla paste, and instant espresso powder until smooth
- Fold in the flour, baking powder, baking soda, salt, and cinnamon until just combined
- Pour the batter into a prepared loaf pan and bake for 5 minutes at 375f then reduce the heat to 350f for another 40-50 minutes, or until a toothpick inserted into the center comes out clean
- While the banana bread is baking, pull a double shot of espresso and stir in about
- Once the banana bread comes out of the oven, poke holes all over the top with a skewer or toothpick and slowly pour the espresso mixture over the loaf, allowing it to soak in
- Spread over the completely cooled banana bread, then finish by dusting cocoa powder on top
