Ingredients
- 115 g melted butter (1/2 cup)
- 150 g white sugar (3/4cup)
- 1 large egg
- 1 large egg yolk
- 2 tbsp biscoff spread
- 1 tsp vanilla extract
- 150 g all purpose flour (1 1/4 cup)
- 1/4 tsp baking powder
- 1/2 tsp salt
- 8 pcs chopped biscoff cookies
- 1 block (8oz) cream cheese
- 1 large egg
Instructions
- In a medium bowl, whisk together the melted butter and both sugars until smooth and glossy.
- Add the egg, egg yolk, and vanilla, then whisk until fully combined and slightly thickened.
- Gently fold in the flour, baking powder, and salt until just incorporated.
- Add the Biscoff spread and crushed Biscoff cookies, folding gently to keep the batter soft.
- Spread about 3/4 of the batter evenly into a lined 8×8-inch pan.
- In a separate bowl, whisk (or use a hand mixer) the softened cream cheese, sugar, and egg yolk until smooth and creamy.
- Spoon dollops of the remaining batter on top, then swirl in extra Biscoff spread.
- Finish with more crushed Biscoff cookies if you like.
- Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until the edges are set and the center has a slight jiggle.
- Let cool for 15 mins then refrigerate for 1-2 hrs.
Tip: Chilling the dough deepens the flavour and stops the spread — worth the wait.
