Ingredients

  • 1/4 cup (56g) unsalted butter, melted & slightly cooled (for the cookie dough)
  • 1/3 cup (65g) brown sugar, packed (for the cookie dough)
  • 2 tbsp (25g) granulated sugar (for the cookie dough)
  • 1 egg yolk, room temp (for the cookie dough)
  • 1 tsp vanilla (for the cookie dough)
  • 1/4 tsp salt (for the cookie dough)
  • 1/8 tsp baking powder (for the cookie dough)
  • 1/2 cup (63g) all-purpose flour (for the cookie dough)
  • 1 tsp cornstarch (for the cookie dough)
  • 1/2 cup chocolate chips (for the cookie dough)
  • 10 tbsp (140g) melted unsalted butter (for the brownie batter)
  • 1 cup (200g) granulated sugar (for the brownie batter)
  • 1/4 cup (50g) brown sugar, packed (for the brownie batter)
  • 2 eggs, room temp (for the brownie batter)
  • 1 tsp vanilla extract (for the brownie batter)
  • 1/2 cup + 2 tbsp (56g) unsweetened cocoa powder (for the brownie batter)
  • 1/2 tsp salt (for the brownie batter)
  • 1 tbsp (13g) vegetable oil (for the brownie batter)
  • 1/2 cup (63g) all purpose flour, spooned & leveled or weighed (don't pack it in) (for the brownie batter)
  • 3/4 cup chocolate chips/chopped chocolate (for the brownie batter)

Instructions

  1. Preheat oven to 325°F (163°C) and grease/line an 8x8-inch pan with parchment paper.
  2. To make the cookie dough, whisk together the melted butter and both sugars until smooth.
  3. Add the egg yolk and vanilla, mix until combined.
  4. In a separate bowl, combine the flour, salt, cornstarch, and baking powder.
  5. Fold the dry ingredients into the wet until just combined.
  6. Gently fold in the chocolate chips.
  7. Chill this dough while you make the brownie batter.
  8. In a large bowl, whisk melted butter and both sugars until smooth.
  9. Add eggs and vanilla, then whisk vigorously for 1-2 minutes to help create a crackly top.
  10. Stir in cocoa powder and salt until fully combined.
  11. Mix in oil, then gently fold in the flour until just combined (don't over mix).
  12. Fold in chocolate chips/chopped chocolate.
  13. Spread brownie batter into the prepared pan.
  14. Drop spoonfuls of the cookie dough onto the brownie batter. (You don't need to cover it completely)
  15. Add a few more chocolate chips on top if you'd like.
  16. Cover with foil and bake for 20 minutes, then, remove the foil and bake for 15-25 more minutes until a toothpick inserted near the center comes out with moist crumbs/mostly clean (not wet batter).
  17. Let the brookies cool completely for clean cuts.
