Ingredients
- 1 box strawberry cake mix (for the cake)
- Guava Nectar (Replace the water in the box instructions) (for the cake)
- Oil & eggs (as instructed on the box) (for the cake)
- 2 cups (~500g) guava nectar (divided) (for the guava topping)
- 1/2 cup (100g) granulated sugar (for the guava topping)
- 3 tbsp (23g) cornstarch (for the guava topping)
- 8oz cream cheese, room temp (for the frosting)
- 1/2 cup (60g) powdered sugar (for the frosting)
- 1 tsp vanilla (for the frosting)
- 8oz cool whip, thawed (for the frosting)
Instructions
- This Hawai'i-style guava cake is cute, easy to make, and a personal favorite! A little taste of my home
- Make the cake as directed on the box, but replace the water with guava nectar.
- Bake in a greased 9x13 pan and let it cool completely.
- To make the guava topping, heat 1 3/4 cups guava nectar (reserving 1/4 cup for later) and sugar in a saucepan over medium heat until the sugar dissolves and it gently simmers.
- In a small bowl, combine the cornstarch with the remaining guava nectar (1/4 cup) until smooth.
- Slowly whisk in the cornstarch slurry and cook, stirring constantly, until thick and glossy. Remove from heat & let it cool in a heat safe bowl/container.
- For the frosting, beat cream cheese and powdered sugar until smooth. Add vanilla.
- Fold in Cool Whip.
- Spread the frosting over the cooled cake.
- Pour the cooled guava topping over the frosting.
- Chill for at least 2 hours before serving. Top with fresh strawberries if you'd like.
