Ingredients

  • 1 box strawberry cake mix (for the cake)
  • Guava Nectar (Replace the water in the box instructions) (for the cake)
  • Oil & eggs (as instructed on the box) (for the cake)
  • 2 cups (~500g) guava nectar (divided) (for the guava topping)
  • 1/2 cup (100g) granulated sugar (for the guava topping)
  • 3 tbsp (23g) cornstarch (for the guava topping)
  • 8oz cream cheese, room temp (for the frosting)
  • 1/2 cup (60g) powdered sugar (for the frosting)
  • 1 tsp vanilla (for the frosting)
  • 8oz cool whip, thawed (for the frosting)

Instructions

  1. This Hawai'i-style guava cake is cute, easy to make, and a personal favorite! A little taste of my home
  2. Make the cake as directed on the box, but replace the water with guava nectar.
  3. Bake in a greased 9x13 pan and let it cool completely.
  4. To make the guava topping, heat 1 3/4 cups guava nectar (reserving 1/4 cup for later) and sugar in a saucepan over medium heat until the sugar dissolves and it gently simmers.
  5. In a small bowl, combine the cornstarch with the remaining guava nectar (1/4 cup) until smooth.
  6. Slowly whisk in the cornstarch slurry and cook, stirring constantly, until thick and glossy. Remove from heat & let it cool in a heat safe bowl/container.
  7. For the frosting, beat cream cheese and powdered sugar until smooth. Add vanilla.
  8. Fold in Cool Whip.
  9. Spread the frosting over the cooled cake.
  10. Pour the cooled guava topping over the frosting.
  11. Chill for at least 2 hours before serving. Top with fresh strawberries if you'd like.
