Ingredients
- 1 box of red velvet cake mix (for the batter)
- 1 cup mashed banana (2-3 bananas) (for the batter)
- 3 eggs (for the batter)
- 1/3 cup (76g) unsalted butter (or oil), melted & slightly cooled (for the batter)
- 4 oz cream cheese, room temp (block style, not spreadable) (for the cream cheese frosting)
- 2 tbsp (28g) unsalted butter, room temp (for the cream cheese frosting)
- 1/2 tsp vanilla (for the cream cheese frosting)
- ~1 cup (120g) powdered sugar (adjust amount for desired consistency) (for the cream cheese frosting)
- Pinch of salt (optional) (for the cream cheese frosting)
- + optional valentines sprinkles for topping (for the cream cheese frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9x5 loaf pan with parchment paper.
- Whisk together mashed bananas, butter, and eggs.
- Gently fold in the red velvet cake mix until just combined, don't over mix.
- Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean/with a few moist crumbs.
- Let it cool completely.
- To make the frosting, beat the cream cheese and butter together until smooth. Then beat in the powdered sugar and vanilla.
- Spread this over the completely cooled loaf.
- Top with valentines sprinkles if you'd like.
