Ingredients
- 1/2 cup (113g) unsalted butter, melted & slightly cooled (for the batter)
- 3/4 cup (150g) brown sugar, packed (for the batter)
- 1/4 cup (50g) granulated sugar (for the batter)
- 2 large eggs, room temp (for the batter)
- 1 tsp vanilla extract (for the batter)
- 3/4 tsp almond extract (this is for the sugar cookie flavor, increase to 1 tsp if you want it stronger or 1/2 tsp if you want it to be light) (for the batter)
- 3 overripe bananas, mashed (for the batter)
- 1/4 cup (60g) sour cream, room temp (for the batter)
- 1 1/2 cups (190g) all-purpose flour (for the batter)
- 1/2 tsp cornstarch (for the batter)
- 1 tsp baking soda (for the batter)
- 1/2 tsp salt (for the batter)
- 1/3 cup christmas sprinkles + more for topping (for the batter)
- (I recommend jimmies. Don't use nonpareils, they will bleed) (for the batter)
- 1/2 cup (60g) powdered sugar (for the optional glaze)
- 2-3 tsp milk (adjust for desired consistency) (for the optional glaze)
- Splash of vanilla (for the optional glaze)
Instructions
- Preheat oven to 350°F (175°C) and line a 9x5 loaf pan with parchment.
- Whisk together melted butter and brown sugar.
- Add eggs, vanilla, almond extract, mashed bananas, and sour cream and mix until smooth.
- Whisk dry ingredients in a separate bowl: flour, cornstarch, baking soda, and salt.
- Fold dry ingredients into the wet until just combined. Don't over mix.
- Fold in the sprinkles gently.
- Spread batter into the loaf pan and add more sprinkles on top.
- Bake 50-60 minutes or until a toothpick inserted comes out clean/with a few moist crumbs. Tent with foil in the last 10-15 minutes if the top is browning too much.
- Let cool completely.
- Whisk glaze ingredients and drizzle over the cooled loaf.
