Ingredients
- 1/4 cup (56g) melted unsalted butter
- 5 tbsp (65g) granulated sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/8 tsp almond extract
- 1/2 cup + 1 tbsp (75g) all-purpose flour
- 1 tsp cornstarch
- 1/4 tsp baking soda
- Pinch of salt
- 2 tbsp christmas sprinkles + more for topping
- Vanilla ice cream (for the optional toppings)
- Icing or marshmallow fluff (to drizzle) (for the optional toppings)
- More christmas sprinkles (for the optional toppings)
Instructions
- Preheat oven to 325°F (163°C) and lightly grease a 6” cast iron skillet (i recommend using butter to grease it).
- To make the cookie dough, mix melted butter (slightly cooled) with sugar until smooth.
- Stir in egg yolk, vanilla, and almond extract until smooth.
- In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
- Fold the dry ingredients into the wet until just combined.
- Gently fold in sprinkles.
- Press dough evenly into the prepared skillet and top with more christmas sprinkles.
- Bake 14-18 min until center is mostly set. (it should still be soft but not super jiggly or raw).
- Let rest just 5-10 minutes before adding vanilla ice cream (and other toppings) so it stays gooey but fully set. (careful, the skillet is hot!)
