Ingredients

  • 3/4 cup browned butter (170g) (for the dough)
  • 2/3 cup brown sugar (133g) (for the dough)
  • 1/4 cup granulated sugar (50g) (for the dough)
  • 1 egg (for the dough)
  • 1 tbsp heavy (for the dough)
  • 1 tsp vanilla (5g) (for the cream)
  • 2 cups all-purpose flour (240g) (for the cream)
  • 1/2 tsp baking soda (3g) (for the cream)
  • 1/4 tsp salt (1 (for the cream)
  • 1 cup granulated sugar (200g) (for the cream)
  • 1/2 cup light brown sugar (100g) (for the cream)
  • 1/2 cup melted butter, warm not hot (113g) (for the cream)
  • 1/3 cup neutral oil (55g) (for the cream)
  • 2 large eggs + (for the cream)
  • 1 egg yolk (for the cream)
  • 1 tsp vanilla extract (4g) (for the cream)
  • 3/4 cup all-purpose flour (95g) (for the cream)
  • 1/2 cup unsweetened cocoa powder (50g) (for the cream)
  • 1/2 tsp instant espresso powder (for the cream)
  • 1/2 tsp salt (3g) dark chocolate chips (measure with your heart) preheat oven to 325°f (for the cream)

Instructions

  2. Add the egg, heavy cream and vanilla and whisk until smooth
  3. Fold in the flour, baking soda, & salt until just combined

  5. In a bowl whisk together melted butter, oil, granulated sugar, and brown sugar for about a minute until glossy
  6. Add eggs, and vanilla and whisk another minute until pale and slightly thick
  7. Sift in flour, cocoa powder, espresso powder, and salt
  8. Fold until just combined, then fold in chopped chocolate chips and oreos
  9. To assemble the brookies: line an 8×
  10. Press a few extra crushed oreos on top for the final layer
  11. Bake at 325°f for about 45–60 minutes
  12. If the top needs more color near the end, let it finish at 350° until the top gets slightly crisp
  13. ( if it starts browning too fast tent with foil ) let cool at least 30–45 minutes before slicing so the brownies can set
