No-oven skillet banana bread
Honey-sweetened chocolate chip banana bread cooked low and slow in a covered skillet — golden, moist, and entirely oven-free.

Ingredients
- 320 g ripe banana (2 large)
- 2 eggs (100 g)
- 55 g melted butter
- 60 g white sugar
- 50 g honey (or brown sugar)
- 2 tbsp yogurt or heavy cream
- 45–50 g milk
- 185 g all-purpose flour
- 4 g baking powder
- 2–3 g baking soda
- 1 tsp cinnamon
- 1 g salt
- 90–120 g chocolate chips, plus chunks to decorate
Instructions
- Grease a large lidded skillet (about 28 cm).
- Mash the bananas and mix with the eggs, sugar and honey.
- Add the butter, yogurt and milk, and mix well.
- Fold in the dry ingredients very gently until just smooth, and decorate with chocolate chunks and chips.
- Cover and cook on the lowest flame 40 minutes — no peeking for the first 30.
- Toothpick test; if clean, it's done. A quick broil gives the top color, or bake instead at 170–175°C (338–347°F) for 30–40 minutes. Rest before slicing.
