Ingredients
- 1/2 cup (113g) unsalted butter, melted & slightly cooled
- 1/2 cup (100g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 2 large eggs, room temp
- 1 1/2 tsp vanilla extract
- 3 overripe bananas, mashed
- 1/3 cup (85g) creamy peanut butter (not natural style)
- 1/3 cup (80g) sour cream or full-fat Greek yogurt, room temp
- 1 2/3 cups (210g) all-purpose flour, spooned & leveled or weighed (don't pack it in)
- 1 tsp cornstarch (optional)
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup peanut butter chips
- 1/4 cup chocolate chips (or just more pb chips if you want it to shine more)
- 1/2 cup chopped reese's pb cups (I froze them first so they were easier to chop)
- Mini marshmallows (around 1 cup) (for the topping)
- Chopped reese's peanut butter cups (for the topping)
- Graham cracker pieces (for the topping)
Instructions
- Preheat oven to 350°F and grease/line a 9x5 loaf pan.
- In a large bowl whisk together the melted butter and both sugars until smooth.
- Then, whisk in the eggs and vanilla until well combined.
- Mix in the mashed bananas, peanut butter, and sour cream.
- In a separate bowl whisk together the flour, cornstarch, baking soda, cinnamon, and salt.
- Gently fold the dry ingredients into the wet until just combined. Don't over mix.
- Fold in the chocolate chips, peanut butter chips, & peanut butter cups.
- Pour batter into the prepared pan and smooth the top.
- Bake for 50-55 minutes until a toothpick comes out with moist crumbs (not completely clean but no wet batter).
- Cover the top with mini marshmallows and bake 5-10 more minutes.
- Top with graham cracker pieces and reese's peanut butter cups after baking.
- Cool before slicing.
