Ingredients
- 3/4 cup (170g) unsalted butter (brown it)
- 1 1/4 cups (250g) light brown sugar, packed
- 2 eggs + 1 egg yolk, room temp
- 2 tsp vanilla extract
- 1 1/2 cups (185g) all-purpose flour (spooned & leveled or weighed, don't pack it in)
- 1 tsp cornstarch (optional)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 8 oreos, coarsely chopped
- 1/3 cup (55g) white chocolate chips/chunks + more for topping
- 3-4 oreos for topping, broken into pieces
Instructions
- In a saucepan, brown the butter over medium heat. Stir constantly until it foams then turns a golden brown color.
- It should have a nutty aroma with little brown bits.
- Transfer to a heat safe bowl (make sure to get all those little brown bits in there!)
- Cool for about 10 minutes.
- Preheat oven to 325°F (163 °C) and line/grease an 8x8 pan.
- Mix the slightly cooled brown butter and brown sugar together.
- Beat in the eggs, egg yolk, and vanilla until smooth.
- Whisk together the flour, cornstarch, baking powder, and salt, then fold into the wet ingredients until just combined.
- Gently fold in the chopped oreos and white chocolate chips. Do not over mix.
- Spread the batter evenly in the pan and press the remaining oreos and white chocolate chips lightly on top.
- Bake 30-40 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let it cool for clean cuts.
