Ingredients
- 10 tbsp (140g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/4 cup (50g) brown sugar, packed
- 2 eggs, room temp
- 1 tsp vanilla extract
- 1/2 cup + 2 tbsp (56g) unsweetened cocoa powder
- 1/2 tsp salt
- 1 tbsp (13g) vegetable oil
- 1/2 cup (63g) all purpose flour, spooned & leveled or weighed (don't pack it in)
- 3/4 cup chocolate chips
- ~16 whole oreos for oreo layer (+ more chopped oreos for topping)
- 8 oz cream cheese, room temp (for the cream cheese layer)
- 1/4 cup (50g) sugar (for the cream cheese layer)
- 1 egg (for the cream cheese layer)
- 1/2 tsp vanilla (for the cream cheese layer)
- 1 tbsp sour cream (for the cream cheese layer)
Instructions
- Preheat oven to 325°F and line/grease an 8x8-inch pan with parchment.
- In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
- Add eggs and vanilla, then whisk vigorously for 1-2 minutes.
- Stir in cocoa powder and salt until fully combined.
- Mix in oil, then gently fold in the flour until just combined (don't over mix).
- Fold in the chocolate chips.
- Spread most of the brownie batter into the prepared pan, reserving a little bit of it to swirl.
- Beat cream cheese until smooth, add sugar, vanilla, and sour cream.
- Gently mix in the egg.
- Add a layer of oreos over the brownie layer and pour the cream cheese mixture on top.
- Dollop the reserved brownie batter on top.
- Swirl gently with a knife or chopstick.
- Sprinkle chopped oreos all over.
- Bake at 325°F for 35-45 minutes until edges are set and the center is still slightly jiggly.
- Let it cool completely, then chill for at least 1 hour.
