Mixed Berry Crumble Cheesecake Bars
Part of: Cheesecake bars
A cinnamon crumble crust holds a sour cream cheesecake layer and a jammy mixed berry filling, with more crumble scattered over the top.
Three layers in one pan: a buttery cinnamon crumble crust, a creamy vanilla cheesecake and a jammy mixed berry filling, all covered with more crumble. They taste like a berry crumble and a cheesecake at once.
Why this recipe works
One crumble mixture does two jobs. Flour, two sugars, cinnamon and a little baking powder are tossed with melted butter and an egg yolk until crumbly; half is pressed and prebaked into a firm crust, and the rest is scattered on top, where it bakes into a crisp topping. The yolk helps the crust hold together. Frozen mixed berries are cooked down and thickened with a cornstarch slurry until jammy, so they sit on the cheesecake instead of soaking into it, and they must be cool before going on. The oven starts at 350°F for the crust, then drops to 325°F so the cheesecake bakes gently for 40 to 50 minutes under its fruit and crumble. The long chill sets all three layers for clean slices.
Key ingredients
- Frozen mixed berries (2 cups): Cooked into a jammy fruit layer.
- Cornstarch slurry: Thickens the berries so they stay on top.
- Cinnamon crumble (flour, two sugars, butter, egg yolk): The crust and the topping.
- Block cream cheese (16 oz): The creamy middle layer.
- Sour cream (1/4 cup): Tang and creaminess.
- Lemon juice (1 1/2 tsp): Brightens the berries.
Step-by-step tips
- Step 2: mash only the larger berries so some texture remains.
- Step 5: the filling should coat a spoon and look jammy.
- Step 8: toss with a fork until the mixture forms clumps of different sizes.
- Step 9: press firmly so the crust holds when sliced.
- Step 17: scatter the crumble evenly, leaving some fruit peeking through.
- Step 19: chill for the full 4 hours; three layers need time to set.
Troubleshooting
- The berries soaked into the cheesecake. The filling was not thick or cool enough. Cook it until jammy and cool it completely.
- The crumble is sandy, not clumpy. Add the butter mixture gradually and toss until clumps form.
- The crust is soft. Prebake it until just set and lightly golden.
- The center is liquid. Bake toward the end of the time range; it should only be slightly jiggly.
Variations
- Use only blueberries or only raspberries.
- Add a handful of oats to the crumble topping.
- Serve with a little whipped cream.
How to serve
Serve chilled in squares. They are good for summer gatherings and brunch.
Make ahead
Make the berry filling a day ahead. Bake the bars the day before serving, since they need 4 hours to chill.
Storage and reheating
Keep them covered in the fridge. The crumble softens over time, so they are best within a couple of days.
Frequently asked questions
Can I use fresh berries?
Yes. They may release less juice, so cook them until jammy.
Why change the oven temperature?
The crust bakes at 350°F; the cheesecake needs a gentler 325°F.
How is this different from the peach cobbler cheesecake bars?
The crumble and cheesecake are the same; here the fruit layer is mixed berries with lemon instead of cinnamon peaches.
Why is there no flour in the cheesecake layer?
The recipe does not use it; the long bake and chill set this layer.
How long should they chill?
At least 4 hours, as the recipe says.
