Lemon Brownies
Soft, buttery lemon brownies made with everyday ingredients — the kind you bake twice in one week.

Ingredients
- 1 large egg + 1 egg yolk
- 150 g granulated sugar (3/4 cup)
- Zest of 2 lemons
- 1/2 cup (115 g) melted butter
- 1 tbsp oil
- 2 tbsp lemon juice
- 150 g all-purpose flour (1 1/4 cup)
- 1/2 tsp salt
- 120 g icing sugar (for the glaze)
- 1-2 tbsp lemon juice (for the glaze)
Instructions
- In a bowl, rub the zest of the lemon with the granulated sugar using your fingers.
- Add in the egg and the yolk and whisk until just combined. Then add the rest of the wet ingredients: butter, oil, and lemon juice. Mix well.
- Fold in the flour, mixing gently making sure not to over mix.
- Transfer the batter to an 8x8 inch sauare pan lined with baking paper.
- Bake at 350F (180C) for 25-27 mins.
- To make the glaze, simply mix the icing sugar and the lemon juice. Start with 1 tbsp first and check for consistency. If it's too thick add lemon juice 1 tsp at a time. If too runny, add more icing sugar 1 tbsp at a time.
- Once baked, let the lemon brownie cool in the pan for 10-15 mins. Then transfer to a wire rack to cool completely, usually 30 mins-45 mins. (Don't slice while it's still hot)
- If you want to dig in right away, pop the brownie in the freezer for 15-20 mins before slicing.
