Lemon Blueberry Olive Oil Cake

Ingredients
- 2 large eggs
- 200 g granulated sugar (1 cup)
- Zest of 2 lemons
- 2 tbsp lemon juice
- 120 ml olive oil (1/2 cup)
- 120 g plain yogurt (1/2 cup)
- 80 ml buttermilk (1/3 cup)
- 1 tsp vanilla
- 220 g all-purpose flour (1 3/4 cups)
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 150 g fresh blueberries
- 60 g (1/4 block) cream cheese (for the glaze)
- 120 g icing sugar (for the glaze)
Instructions
- (using a hand mixer, mix everything together on medium high until creamy and smooth)
- Preheat oven to 180C (350F) then grease and line with baking paper (the bottom only) an 8" round pan.
- Whisk the eggs, sugar, and lemon zest vigorously together until the egg turns pale and foamy
- Add in the rest of the wet ingredients (yogurt, buttermilk, vanilla, lemon juice, olive oil) and whisk well.
- Add the dry ingredients (flour, baking powder, baking soda) fold/mix gently.
- Coat the berries in a little flour and fold into the batter.
- Transfer to the prepared pan and bake for 38-45 mins or until a toothpick inserted comes out clean.
- Let cool completely before frosting.
- Top with more blueberries and enjoy
Tip: Chilling the dough deepens the flavour and stops the spread — worth the wait.
