Lemon Blueberry Olive Oil Cake

Ingredients

  • 2 large eggs
  • 200 g granulated sugar (1 cup)
  • Zest of 2 lemons
  • 2 tbsp lemon juice
  • 120 ml olive oil (1/2 cup)
  • 120 g plain yogurt (1/2 cup)
  • 80 ml buttermilk (1/3 cup)
  • 1 tsp vanilla
  • 220 g all-purpose flour (1 3/4 cups)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 150 g fresh blueberries
  • 60 g (1/4 block) cream cheese (for the glaze)
  • 120 g icing sugar (for the glaze)

Instructions

  1. (using a hand mixer, mix everything together on medium high until creamy and smooth)
  2. Preheat oven to 180C (350F) then grease and line with baking paper (the bottom only) an 8" round pan.
  3. Whisk the eggs, sugar, and lemon zest vigorously together until the egg turns pale and foamy
  4. Add in the rest of the wet ingredients (yogurt, buttermilk, vanilla, lemon juice, olive oil) and whisk well.
  5. Add the dry ingredients (flour, baking powder, baking soda) fold/mix gently.
  6. Coat the berries in a little flour and fold into the batter.
  7. Transfer to the prepared pan and bake for 38-45 mins or until a toothpick inserted comes out clean.
  8. Let cool completely before frosting.
  9. Top with more blueberries and enjoy
Tip: Chilling the dough deepens the flavour and stops the spread — worth the wait.
