Ingredients
- 1/2 cup salted butter
- 1/4 cup neutral oil (50g)
- 3/4 cup brown sugar (150g)
- 1/4 cup granulated sugar (50g)
- 2 large eggs
- 1 tbsp vanilla
- 2 medium ripe bananas
- 1/4 cup sour cream (60g)
- 2 cups all-purpose flour (250g)
- 2 tsp baking powder (8g)
- 1/2 tsp baking soda (3g)
- 1/2 tsp salt (3g)
- 1 tsp cinnamon for the brown sugar
- 1/2 cup brown sugar (100g) (for the streusel)
- 1/3 cup all-purpose flour (40g) (for the streusel)
- 1 tbsp cinnamon (3g) (for the streusel)
- 1/4 tsp salt (for the streusel)
- 1/4 cup cold butter, cubed (57g) preheat oven to 400°f and line a muffin pan with liners (for the streusel)
Instructions
- In a bowl, mix brown sugar, flour, cinnamon, and salt
- Cut in the cold butter with a pastry cutter or your fingers until you get chunky crumbs
- In a large bowl, mash the bananas, whisk in melted butter, oil, brown sugar, and granulated sugar until smooth and glossy
- Add eggs and vanilla and whisk until fully combined
- Add sour cream and mix until smooth
- In a separate bowl, whisk flour, baking powder, baking soda, cinnamon and salt
- Gently fold dry ingredients into the wet mixture just until combined
- Fill liners about halfway full
- Put a layer of streusel then top with more batter
- Top generously with streusel, lightly pressing it into the batter so it sticks
- Bake at 400°f for 5 minutes, then reduce heat to 350°f without opening the oven and bake another 12–15 minutes until centers are set
- Let cool in the pan 5–10 minutes
