Ingredients

  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup + 2 tbsp (225g) granulated sugar
  • 3 large eggs, room temp
  • 1/2 cup (120g) sour cream, room temp
  • 1/4 cup (60ml) milk, room temp
  • 1/4 tsp almond extract
  • 2 cups (250g) all-purpose flour, spooned & leveled or weighed (don't pack it in)
  • 1 packet pistachio pudding mix (3.4oz/96g)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 cup (60ml) hot water
  • + chopped pistachios for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease/line a 9x5 loaf pan with parchment.
  2. In a bowl, cream together butter and sugar until light and fluffy (~2-3 minutes).
  3. Beat in eggs one at a time until combined. Mix in sour cream, milk, and almond extract.
  4. In a separate bowl, whisk together flour, pistachio pudding mix, baking powder, and salt.
  5. Add the dry ingredients to the wet and mix on low speed until just combined. Do not over mix.
  6. Take out 350g of batter (~1/3 of the batter) for the chocolate swirl.
  7. In a small bowl, mix cocoa powder with hot water until smooth, then fold into the reserved batter.
  8. Alternate adding dollops of the pistachio and chocolate batter to the prepared pan, starting and ending with the pistachio.
  9. Gently swirl the chocolate portion as you go (try not to over swirl it).
  10. Top with chopped pistachios.
  11. Bake 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  12. Cool before slicing.
