Ingredients
- 3/4 cup (170g) unsalted butter, softened
- 1 cup + 2 tbsp (225g) granulated sugar
- 3 large eggs, room temp
- 1/2 cup (120g) sour cream, room temp
- 1/4 cup (60ml) milk, room temp
- 1/4 tsp almond extract
- 2 cups (250g) all-purpose flour, spooned & leveled or weighed (don't pack it in)
- 1 packet pistachio pudding mix (3.4oz/96g)
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup (25g) unsweetened cocoa powder
- 1/4 cup (60ml) hot water
- + chopped pistachios for topping
Instructions
- Preheat oven to 350°F (175°C) and grease/line a 9x5 loaf pan with parchment.
- In a bowl, cream together butter and sugar until light and fluffy (~2-3 minutes).
- Beat in eggs one at a time until combined. Mix in sour cream, milk, and almond extract.
- In a separate bowl, whisk together flour, pistachio pudding mix, baking powder, and salt.
- Add the dry ingredients to the wet and mix on low speed until just combined. Do not over mix.
- Take out 350g of batter (~1/3 of the batter) for the chocolate swirl.
- In a small bowl, mix cocoa powder with hot water until smooth, then fold into the reserved batter.
- Alternate adding dollops of the pistachio and chocolate batter to the prepared pan, starting and ending with the pistachio.
- Gently swirl the chocolate portion as you go (try not to over swirl it).
- Top with chopped pistachios.
- Bake 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool before slicing.
