Ingredients
- 1 cup granulated sugar (200g)
- 1/2 cup light brown sugar (100g)
- 1/2 cup melted butter, warm not hot (113g)
- 1/3 cup oil (any neutral oil works)(55g)
- 2 large eggs +
- 1 egg yolk
- 1 tsp vanilla extract (4g)
- 3/4 cup all purpose flour (95g)
- 1/2 cup unsweetened cocoa powder (50g)
- 1/2 tsp instant espresso
- 1/2 tsp salt (3g) dark chocolate chips (measure with your heart) instructions : preheat your oven to 350°f
Instructions
- In the skillet over low heat, melt the butter
- Remove from heat and let it cool for a minute or two so it’s warm, not hot
- Whisk in the oil, granulated sugar, and brown sugar directly in the skillet for a full minute until glossy
- Add the eggs, egg yolk, and vanilla and whisk for another full minute until the mixture looks pale and slightly thick, this is what gives you that crackly top
- Sift in the flour, cocoa powder, espresso powder, and salt
- Gently fold until just combined, being careful not to overmix
- Fold in about half of the chocolate chips
- Smooth the batter evenly in the skillet and sprinkle the remaining chocolate chips on top
- Bake for about 20–25 minutes, since skillets retain heat keep checking on it
- Remove from the oven and let cool in the skillet for at least 30–45 minutes so it can fully set before slicing
- ( i didn’t let mine cool which is why it looks almost raw
