Ingredients

  • 1 cup (226g) unsalted butter, melted and cooled slightly
  • 3 tbsp (45ml) neutral oil, (e.g avocado oil, canola oil )
  • 1 cup (200g) light brown sugar
  • 1/3 cup (67g) granulated sugar
  • 2 eggs, room temp
  • 2 1/4 cups (280g) all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp vanilla bean paste
  • 1 cup semi sweet chocolate chips
  • 1/2 cup m&ms
  • 1/4 cup sprinkles
  • 1/4 cup teddybear graham crackers

Instructions

  1. Preheat oven to 350°F. Prepare an 8*8 baking pan with parchment paper.
  2. In a large mixing bowl, whisk the melted butter, brown sugar, and granulated sugar together. Add eggs, one at a time, mixing well after each addition. Then add the vanilla bean paste and mix until fully incorporated.
  3. In a separate bowl, combine the dry ingredients: all-purpose flour, baking soda, and salt. Mix well to ensure they are thoroughly combined.
  4. Gradually add the dry ingredients into the wet mixture, mixing just until combined.
  5. Gently fold in the chocolate chips, M&M’s, sprinkles, and crushed graham crackers.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
  8. Let the bars cool in the pan for 1 hour. Then lift out using the parchment overhang and transfer to a wire rack to cool completely.
  9. Cut into squares and enjoy your holiday cookie bars!
Tip: Taste the sauce before assembling and adjust the salt then, not after.
