Ingredients

  • 1/2 cup (113g) unsalted butter, melted & slightly cooled
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temp
  • 1 tsp vanilla
  • 3 medium overripe bananas, mashed
  • 1/4 cup (60g) plain Greek yogurt/sour cream, room temp
  • 1 tbsp molasses
  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 4 oz cream cheese, room temp (for the cream cheese frosting)
  • 2 tbsp (28g) unsalted butter, room temp (for the cream cheese frosting)
  • 1/2 tsp vanilla (for the cream cheese frosting)
  • ~ 1 cup (120g) powdered sugar (adjust amount for desired consistency) (for the cream cheese frosting)
  • Pinch of salt (for the cream cheese frosting)
  • + optional: christmas sprinkles for topping (for the cream cheese frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease/line a 9x5 loaf pan with parchment.
  2. In a large bowl, whisk the melted butter with both sugars until smooth, then whisk in the eggs and vanilla.
  3. Add the mashed bananas, sour cream/greek yogurt, and molasses and whisk until fully combined.
  4. In a separate bowl, whisk the flour, baking soda, baking powder, spices, and salt.
  5. Add the dry mixture to the wet mixture and gently fold until just combined. Don't over mix.
  6. Pour the batter into the prepared pan.
  7. Bake for 50-65 minutes or until a toothpick inserted comes out clean/with a few moist crumbs.
  8. Let it cool completely before frosting.
  9. For the frosting, beat the cream cheese and butter until smooth, mix in the powdered sugar, vanilla, and salt, then spread over the fully cooled loaf.
  10. Top with christmas sprinkles if you'd like.
