Ingredients
- 1/2 cup (113g) unsalted butter, melted & slightly cooled
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 2 large eggs, room temp
- 1 tsp vanilla
- 3 medium overripe bananas, mashed
- 1/4 cup (60g) plain Greek yogurt/sour cream, room temp
- 1 tbsp molasses
- 1 3/4 cups (220g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp salt
- 4 oz cream cheese, room temp (for the cream cheese frosting)
- 2 tbsp (28g) unsalted butter, room temp (for the cream cheese frosting)
- 1/2 tsp vanilla (for the cream cheese frosting)
- ~ 1 cup (120g) powdered sugar (adjust amount for desired consistency) (for the cream cheese frosting)
- Pinch of salt (for the cream cheese frosting)
- + optional: christmas sprinkles for topping (for the cream cheese frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease/line a 9x5 loaf pan with parchment.
- In a large bowl, whisk the melted butter with both sugars until smooth, then whisk in the eggs and vanilla.
- Add the mashed bananas, sour cream/greek yogurt, and molasses and whisk until fully combined.
- In a separate bowl, whisk the flour, baking soda, baking powder, spices, and salt.
- Add the dry mixture to the wet mixture and gently fold until just combined. Don't over mix.
- Pour the batter into the prepared pan.
- Bake for 50-65 minutes or until a toothpick inserted comes out clean/with a few moist crumbs.
- Let it cool completely before frosting.
- For the frosting, beat the cream cheese and butter until smooth, mix in the powdered sugar, vanilla, and salt, then spread over the fully cooled loaf.
- Top with christmas sprinkles if you'd like.
