Ingredients

  • 115 g melted butter (1/2 cup)
  • 100 g granulated white sugar (1/2 cup)
  • 65 g light brown sugar (1/3 cup)
  • 1 large egg
  • 1 tsp vanilla extract
  • 165 g all-purpose flour (1 1/3 cup)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 100g white chocolate chips (1/2 cup)
  • 1/4 cup rainbow sprinkles
  • 250g soft cream cheese (1 block)
  • 1/2 tsp vanilla
  • 2 tbsp rainbow sprinkles

Instructions

  1. To make the cookie, whisk the melted butter and sugars then add the egg and vanilla, whisk until combined.
  2. Fold in flour, baking powder, baking soda, and salt. Mix gently until almost combined, then fold in chocolate and sprinkles.
  3. Place the cookie dough in the freezer for 10 mins while you make the cheesecake filling.
  4. To make the cheesecake, mix the soft cream cheese, sugar, vanilla, and the sprinkles.
  5. Prepare a 7" springform pan by lining the bottom with parchment paper.
  6. Scoop 2/3 of the dough onto the pan and spread at the bottom.
  7. Add the cheesecake filling then top with the remaining cookie dough.
  8. Bake in a preheated oven for 15-18 mins or until the top is set and golden.
  9. Serve at room temperature for gooey cheesecake filling or cold for a creamy one
