Ingredients
- 115 g melted butter (1/2 cup)
- 100 g granulated white sugar (1/2 cup)
- 65 g light brown sugar (1/3 cup)
- 1 large egg
- 1 tsp vanilla extract
- 165 g all-purpose flour (1 1/3 cup)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 100g white chocolate chips (1/2 cup)
- 1/4 cup rainbow sprinkles
- 250g soft cream cheese (1 block)
- 1/2 tsp vanilla
- 2 tbsp rainbow sprinkles
Instructions
- To make the cookie, whisk the melted butter and sugars then add the egg and vanilla, whisk until combined.
- Fold in flour, baking powder, baking soda, and salt. Mix gently until almost combined, then fold in chocolate and sprinkles.
- Place the cookie dough in the freezer for 10 mins while you make the cheesecake filling.
- To make the cheesecake, mix the soft cream cheese, sugar, vanilla, and the sprinkles.
- Prepare a 7" springform pan by lining the bottom with parchment paper.
- Scoop 2/3 of the dough onto the pan and spread at the bottom.
- Add the cheesecake filling then top with the remaining cookie dough.
- Bake in a preheated oven for 15-18 mins or until the top is set and golden.
- Serve at room temperature for gooey cheesecake filling or cold for a creamy one
