Ingredients

  • 1 1/2 cups graham cracker crumbs (~12 crushed graham cracker sheets) (for the crust)
  • 2 tbsp (25g) granulated sugar (for the crust)
  • 6 tbsp (85g) unsalted butter, melted (for the crust)
  • 16 oz (454g) cream cheese, softened (block style, not spreadable) (for the cheesecake)
  • 1/2 cup (100g) granulated sugar (for the cheesecake)
  • 1/4 cup (60g) sour cream, room temp (for the cheesecake)
  • 1/2 tsp vanilla (for the cheesecake)
  • 1/2 tsp cake batter extract (for the cheesecake)
  • 1 tbsp cornstarch (for the cheesecake)
  • Pinch of salt (for the cheesecake)
  • 1 egg + 1 egg yolk, room temp (for the cheesecake)
  • 3 tbsp rainbow sprinkles (jimmies/avoid nonpareils) + more for topping (for the cheesecake)
  • Optional: whipped cream for topping (for the cheesecake)

Instructions

  1. Preheat the oven to 325°F.
  2. To make the crust, combine graham cracker crumbs, sugar, and melted butter. Press into a parchment lined 8x8 pan and bake for 8-10 minutes. Let it cool.
  3. Beat cream cheese and sugar together until smooth.
  4. Add in sour cream, vanilla, cake batter extract, and cornstarch until combined.
  5. Mix in the egg and egg yolk gently on low speed or whisk by hand until just combined.
  6. Gently fold in the rainbow sprinkles.
  7. Pour the cheesecake batter over the cooled crust.
  8. Bake for 30-35 minutes until edges are set & center jiggles slightly.
  9. Cool at room temp then chill for at least 3 hrs.
  10. Top with more sprinkles (and whipped cream if you'd like).
