Double Chocolate Banana Loaf

Ingredients
- 1/2 cup (113g) unsalted butter, melted & slightly cooled
- 1 cup (200g) brown sugar, packed
- 2 large eggs, room temperature
- 1 1/2 tsp vanilla extract
- 3 overripe bananas, mashed
- 1/4 cup (60g) sour cream or greek yogurt, room temperature
- 1 1/3 cups (170g) all-purpose flour
- 1/3 cup (35g) unsweetened cocoa powder
- 1/2 tsp cornstarch (optional, for extra tenderness)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped Oreos (~8 oreos) + some for topping
- 1/2 cup (60g) powdered sugar (for the glaze)
- 2-3 tsp milk (adjust for desired consistency) (for the glaze)
- Splash of vanilla (for the glaze)
- Optional: Christmas sprinkles and crushed oreos for topping (for the glaze)
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment.
- Whisk together melted butter and brown sugar.
- Add eggs, vanilla, mashed bananas, and sour cream and mix until smooth.
- Whisk dry ingredients in a separate bowl: flour, cocoa powder, cornstarch, baking soda, and salt.
- Fold dry ingredients into the wet until just combined. Don't over mix. (Add a tbsp of milk if the batter is too thick)
- Fold in the chopped oreos gently.
- Spread batter into the loaf pan and press some more chopped oreos on top.
- Bake 50-60 minutes or until a toothpick inserted comes out clean/with a few moist crumbs.
- Let cool completely.
- Whisk glaze ingredients and drizzle over the cooled loaf.
- Top with christmas sprinkles and crushed oreos.
