Double Chocolate Banana Loaf

Ingredients

  • 1/2 cup (113g) unsalted butter, melted & slightly cooled
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 1/2 tsp vanilla extract
  • 3 overripe bananas, mashed
  • 1/4 cup (60g) sour cream or greek yogurt, room temperature
  • 1 1/3 cups (170g) all-purpose flour
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 tsp cornstarch (optional, for extra tenderness)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped Oreos (~8 oreos) + some for topping
  • 1/2 cup (60g) powdered sugar (for the glaze)
  • 2-3 tsp milk (adjust for desired consistency) (for the glaze)
  • Splash of vanilla (for the glaze)
  • Optional: Christmas sprinkles and crushed oreos for topping (for the glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment.
  2. Whisk together melted butter and brown sugar.
  3. Add eggs, vanilla, mashed bananas, and sour cream and mix until smooth.
  4. Whisk dry ingredients in a separate bowl: flour, cocoa powder, cornstarch, baking soda, and salt.
  5. Fold dry ingredients into the wet until just combined. Don't over mix. (Add a tbsp of milk if the batter is too thick)
  6. Fold in the chopped oreos gently.
  7. Spread batter into the loaf pan and press some more chopped oreos on top.
  8. Bake 50-60 minutes or until a toothpick inserted comes out clean/with a few moist crumbs.
  9. Let cool completely.
  10. Whisk glaze ingredients and drizzle over the cooled loaf.
  11. Top with christmas sprinkles and crushed oreos.
